These controls solve different problems. Hiding one profile field does not make the entire account invisible.
Hide age
Subscriber setting. Subscribers can hide the displayed age, but Tinder says age cannot be edited after account creation.

Turn off Discovery when you want to pause visibility

Important limit
Discovery is not a retroactive eraser. Someone you liked before switching it off may still see your profile and like you back. Existing matches can continue to view the match and chat.

What Tinder settings do not remove from the public web
